Food and Culture students made hudutu (machuca), a Garifuna coconut-based seafood soup with mashed green and ripe plantains. Cooking class taught by Walagante Expo, a local Garífuna museum effort. Thanks to Dorina Chimilio, Miriam Chimilio, and Elga Garcia.
Hudutu demonstrates diasporic food from the Caribbean coasts of Central America and is related to mofongo and other plantain-based dishes. The starchy plantain and its preparation is reminiscent of fufu from West Africa.Tuesday, November 7, 2023 | 6:00 PM - 8:00 PM
